My dinner last night! I had marinated some tempeh in a little braggs, sriracha, and tahini. I scraped the brown centers out of two portabella caps and filled on half with a small handful of mixed baby greens, layered on some of the tempeh, some fresh clover sprouts, and a few slices of avocado. Topped with the other half of the portabella and presto, a delicious sandwich! It was sooo good, I ate two! Yay for healthy sandwiches!
